It's parade day! Hi there and welcome to the first week of Popsicle Parade! During the next three months we'll beat the summer heat together by trying a new popsicle recipe each week. The recipe of the week will be posted on Monday, and I'll be documenting our popsicle adventure on Instagram (@simpleanalogy) so check in for more pictures!

When I buy a watermelon, I never know just how it's gonna be when I open it up. So when I bought my first one of the year, I mixed my thumpin' test (should sound very deep) with a little wish that this watermelon would be perfect. And it was!
Cubed watermelon, hulled and quartered strawberries, juiced lime, and a little sugar make a delightful combination! The ratio of strawberries to watermelon is perfect - neither flavor overpowers the other. One thing you should know... I NEVER strain my popsicles. It takes longer to make popsicles if you strain them, and I like the quick and easy method! Plus, I like the texture that the seeds and pulp add.
My husband is a landscaper and works in the heat all day long. My teenage sons help him during the summer as well, so these popsicles really hit the spot! They were a super good start to the popsicle parade at my house.
