Noah is 11 and has never really liked salsa, mainly "because it's always too spicy". Even when I'd buy mild, he never really liked it. Until he tried Megan's homemade salsa the other day. (Doesn't suprise me, because anything Megan makes is GOLDEN!) He ate and ate and ate. I've never seen him go for salsa like that. Meg sent some home for him, but Joel found it and quickly polished it off. Later when Noah went looking for it, he was very disappointed in his father.
We can't have a non-salsa-eater turned salsa-eater with no salsa to eat, so we bought a small food processor and the ingredients and made some. Here is Noah's testimonial... "This tastes SO good! It's easy to make (about 5 minutes) and not too spicy. What makes it even better is that WE made it."
MEGAN'S DELICIOUS NON-SPICY SALSA
1 15oz. can diced tomatoes (I used 4 small tomatoes)
1 jalapeno (no seeds/ribs)
1 garlic clove, peeled and smashed - OR - 1/4 small onion diced
handful of cilantro
1 lime, juiced
salt and pepper to taste
Place all ingredients into food processor (3 cup is what I used) and pulse. That's it!
If you want to make it spicier leave the seeds/ribs in the jalapeno. Also, Megan does not like onions. No way! But if you must have onions in your salsa, just add a little bit. I think we'll be making double batches: one of Megan's for Noah and I, and one hotter with onions for Joel and Landon.
