Summer is here! Houston is always hot, but I'm feeling it more this year because I have long hair now. So when I came across this popsicle recipe, we had to try it. I modified it a bit based on Alicia's version (kiwi/strawberry), but kept the lime. I also kept the kiwi seeds because those little things are one of my favorite textures.
They are THE best popsicles we have ever had! The texture is so nice - not too hard/icy where they hurt your teeth when you bite down, but not too slushy either.
Just P-E-R-F-E-C-T! And eaten right after grilled BBQ chicken (used the marinade from this recipe and substituted chicken breasts for pork loin) and corn on the cob with chili lime spread, it was the perfect desert.
I'm throwing out all the other popsicles, except for Dryer's Creamy Coconut, and putting ingredients for these in the staples column of my grocery list for the summer.
